Emergency Substitutions
What you can and can't do

FOR

USE

1 1/2 teaspoons cornstarch

1 tablespoons flour
1 whole egg 2 egg yolks+1 tablespoon water (in cookies)
2 egg yolks (in custards or similar foods)
1 cup whole milk 1/2 cup evaporated milk+1/2 cup water
OR
1 cup nonfat dry milk+2 teaspoons butter
1 ounce unsweetened chocolate 3 tablespoons cocoa+1 tablespoons shortening
1 cup honey 1 1/4 cups sugar+ 1/4 cup liquid
1 Cup Buttermilk

1T. Lemon juice or vinegar+enough whole milk to make 1 cup

1 Teaspoon baking powder

1 Teaspoon cream of Tartar+¼ Teaspoon baking soda

1 clove garlic ¼ teaspoon garlic powder
1 Teaspoon dry mustard 1 Tablespoon prepared mustard
1 cup cake flour, sifted 7/8 cup all purpose flour
